White Chocolate Chip Brownies

The recipe for these soft and chewy brownies was taken directly from the Hummingbird Bakery cookbook (changing a few details) , which I really like because it has very easy and delicious recipes.

Here are the ingredients:

225g of dark chocolate finely chopped
170g of unsalted butter
325g of caster sugar
130g of plain flour
3 eggs
100g of white chocolate chips

First of all you should preheat your oven to around 170ºC. Then put the dark chocolate and the butter in a heatproof bowl in a water bath (over a pot of simmering water) and mix it around until it is just melted.

Once it is melted, leave it to cool for 5 minutes and then ad the sugar to it and stir it in until it is fully mixed in.

Now, add the flour using a spatula and mix it in gently.

Then, add the eggs one by one and mix well in between each addition.

(This is the part that is extra) Now you can add some white chocolate chips or whatever nut you want to put into it and stir it in again with the spatula.

Finally, in a greaseproof paper lined pan, pour the batter and then spread it out evenly with a spatula, so that it is all at the same level.

Once the batter is level in the pan, leave it in the oven for around 30-35 minutes, the baking time depends on your preferences, if you’d prefer a more chewy brownie leave it in for longer.

The other day when walking around Palma we found a Boba House and I had a boba tea and also a strawberry and cream waffle, I thought I’d share these pictures as they were both really good:
