Vegan Chocolate Cupcakes + Vegan Ganache 🌱

WARNING: If you’re grossed out by avocados please don’t read this recipe! jajaj



First of all, lets talk about Veganism. In case you don’t know what veganism is it’s a lifestyle than doesn’t contribute to animal damage or harm. Vegans basically eat a plant-based diet and don’t wear/use any products containing or tested by animals. This lifestyle is considered to be the best diet for well being and health in the world.
I thought I’d do this recipe (like the vegan mug cake) just to show you that vegan food (+desserts) can be just as amazing as regular non-vegan food.



Also, this recipe doesn’t use any weird “fake butters” or artificial flavours to make them taste like non-vegan foods. They are just good all by themselves! ;D
The only thing that I will warn you about is that as you’ll feel no guilt for eating these, (as you won’t be harming any animals) and you’ll probably end up eating all of them in less than one week.

🌱 Vegan Chocolate Cupcakes🌱:

250ml of any tipe of non-dairy milk
172g of caster sugar
1/2 cup of canola/vegetable oil
1 1/2 of tsp cider vinegar
160g of all-purpose flour
40g of cocoa powder
3/4 tsp of baking soda
1/2 tsp of baking powder
1/4 tsp of salt


First of all sift all of the dry ingredients together in a large bowl (you can do this by using a whisk or your electric mixer on the lowest speed). At this point preheat your oven to about 10-175ºC. Next add all of the wet ingredients into a smaller bowl and whisk them all together. Then add the dry ingredients into the wet ingredients and mix thoroughly for about 20-30 seconds. I also decided to add in some nuts at this point.


When the batter is ready, prepare a cupcake tin with cupcake liners/papers. Use an ice-cream scoop to scoop the batter into the individual casings. I normally use a 49mm wide ice-cream scoop. After the batter is scooped place the tray in the oven and bake for about 20-25 minutes.


Now that the cupcakes are baked, it's time to make the non-buttercream jajaja!

🌱 Vegan Chocolate "Ganache"🌱:

3 ripe avocados
660g of icing sugar, sifted
200g of cocoa powder

Now, this icing is one of the easiest recipes to make that you'll ever find as it doesn't requiere those endless minutes of whipping the butter just to make the icing nice and fluffy.
To make the buttercream just simply put the pieced avocados into a blender/food processor and blend 10 seconds until smooth. When the avocados are smooth add in half the icing sugar and pulse for 5 seconds. Then add in the rest of the icing sugar and the cocoa powder.

When everything is just mixed together (don't overmix the icing as it will go too thin) get a piping bag and fit it with a stared nozzle. Add the icing inside and place it in the fridge for 10 minutes.

When the cupcakes have cooled down completely, you can start to pipe the icing on the cupcakes in any motion you like (I did a high swirl because this icing is just amazing and looks very glossy XD).

When the cupcakes are iced sprinkle on top some sea salt flakes!
(PS: did you know that salt brings up the chocolate flavour?
